a delicious recipe to keep you distracted from the wintertime blues
CHOCOLATE COFFEE CAKE:
Butter and Flour for coating and dusting the cake pan
1.5 cups all-purpose flour
1.5 cups granulated sugar
3/4 cups unsweetened cocoa powder
1/2 tablespoon baking soda
3/4 teaspoons baking powder
3/4 teaspoons salt
2 large eggs
3/4 cups buttermilk
3/4 cups lukewarm coffee (leftover from the morning pot)
1/4 cup vegetable oil
1 teaspoons vanilla extract
DIRECTIONS:
1. Preheat oven to 350 degrees Fahrenheit and butter your cake pans (2 nine-inch pans work great). Cover the butter with cocoa powder and tap out the excess.
2. Mix together all your dry ingredients (cocoa, flour, baking soda, salt). Set aside.
3. In a new bowl, lightly scramble your eggs before adding the remaining wet ingredients (buttermilk, coffee, oil).
4. Split the batter between both pans and bake for 30-35 minutes, until a toothpick inserted in the center of the cakes comes out dry.
5. Cool for at least 20 minutes before attempting to remove the cake from the pan. Frost with your favorite frosting!
